ALEXANDRIA, Va., April 21 -- United States Patent no. 12,604,920, issued on April 21, was assigned to Nagase Viita Co. Ltd. (Okayama, Japan).

"Enzyme composition for food products" was invented by Hisanori Mizobuchi (Kyoto, Japan).

According to the abstract* released by the U.S. Patent & Trademark Office: "Provided is an enzyme composition that can be used to produce food products with less contaminants and excellent flavor and texture. An enzyme composition for food products containing a peptidase and having substantially no contaminating activity."

The patent was filed on March 30, 2022, under Application No. 18/553,119.
