Bhubaneswar, Oct. 27 -- Vikas Khanna's love for India's regional heritage runs deep, but his heart seems to have found a special home in Odisha - a land where art, food, and humanity intertwine. During his visit, the celebrated chef immersed himself in the flavours and craftsmanship of the state, calling Odisha's cuisine "a poetry of simplicity."
He was particularly charmed by Cuttack's iconic street food Dahibara Aloo Dum, which he described as "a genius dish" - soft lentil fritters soaked in curd and topped with spicy potato curry. He also praised traditional Odia dishes like Pakhala Bhata and Chhena Poda for their purity and comfort.
