India, Aug. 19 -- If Jaipur had to pick a culinary mascot, it wouldn't be Dal Baati Choorma, Ghewar, or even Laal Maas. It would be the humble, flaky, deep-fried disc of indulgence known as pyaaz kachori. Ironically, though, Jaipur can't really claim to have invented it. Most food historians will tell you that this spicy, onion-filled beauty was first born somewhere in the Marwar belt, very likely in Jodhpur. But much like Bollywood songs that get adopted as wedding anthems, Pyaaz Kachori found a permanent home in Jaipur's streets and mithai shops. Today, the Pink City has made it so much its own that asking where to get the best and most famous pyaaz kachori in Jaipur is practically a rite of passage for every foodie who sets foot here....
