One-star hygiene rating for a two-star Michelin restaurant!
India, Jan. 17 -- Ynyshir Restaurant and Rooms, in Ceredigion, the only establishment in Wales,UK, to hold two Michelin stars and world-renowned for chef Gareth Ward's, 30-course tasting menus, recently received the lowest possible score for its hygiene, a one-star rating.
In the UK, where food hygiene is rated from 0 to 5, a 1 means "major improvement is necessary."
After a visit in November, inspectors stated: "The building and facilities, like sinks and surfaces, needed to be cleaner or in better condition.
The paperwork used to track food safety wasn't up to standard. However, the actual handling of the food was found to be okay."
The head chef, Gareth Ward, said in a BBC interview that he believes the low score happened because his cooking methods are "different" from what inspectors are used to. For example, he imports high-end raw fish from Japan and ages his meat for a long time.
He argued that just because his kitchen doesn't follow the "standard" rules, it doesn't mean the food is unsafe. HTC...
